Curd Rice Recipe


Ingredients:

1 Cup Boiled Rice
2 cups of plain yogurt (Curd)
2 Tbsp Oil
1/4 cup milk
Finely chopped coriander leaves
1-2 green chilies
1 tsp. chana daal
1 tsp. urad daal
1 tsp. mustard seeds
1 1/2 tsp. finely chopped ginger
2 Tbsp desiccated coconut
1/2 tsp. salt

How to make curd rice:

•In a saucepan heat 2 tablespoonful of oil.
•Add mustard seeds to the oil.
•When the mustard seeds start popping add chana and urad daal.
•After a minute, add in the ginger, coriander and green chilies.
•Sauté them for a minute.
•Take the pan off the gas. Add in the rice.
•Mix the salt and desiccated coconut.
•Just before serving, mix all the ingredients with yogurt (curd) and milk. Curd rice is ready to be served.

Lemon Rice Recipe



Ingredients:

2cups boiled Rice
1/3rd cup Lemon Rice
6Tbsp Oil
1/2tsp Black Mustard seeds
Few curry leaves
3-4 green chilies
Salt to taste
1/4th tsp. turmeric powder
1/4th cup peanuts

How to make lemon rice:

•Heat oil in a pan and add mustard seeds, allow to splutter.
•Add turmeric powder and peanuts, fry till brown.
•Now add green chilies, curry leaves, salt and fry for 2 minutes.
•Take it off from the flame and add lemon juice and mix well.
•Now add this to the boiled rice and mix well.Lemon rice is ready to be served.

Suji Idli Recipe



Ingredients:

1 cup Semolina (Suji)
1/2 cup fresh Curd
1/2 cup water
1 tsp Fruit Salt (Eno)
Salt to taste

How to make suji idli:

•Roast the suji in pan withour oil till it changes it color to light pink on low flame.
•Keep it aside.
•When it gets cool, in a bowl take the curd and add semolina evenly.
•Mix well Samolina, curd, water, salt in a bowl.
•In a pressure cooker put some water to boil.
•Add Eno fruit salt to the batter. Now put 1 spoonful of this batter in the greased idli maker slots.
•Place this idli maker in the cooker and let it steam for 10 minutes.
•Take it out and serve hot with green chutney.

Eggless chocolate Cake with Mocha Icing






Ingredients

Maida/Flour-1 cup
Powdered sugar - 1 cup
Cocoa powder - 2 teaspoons
Baking soda - 1 teaspoon
Baking powder - 1/2 teaspoon
curd - 1/2 cup
Cream (Malai) - 1/2 cup or oil
Vanilla essence - 1 tsp

For the Mocha Glaze Icing

Cocoa powder - 4 tbsp
Softened butter - 4 tbsp
Coffee - 1 tsp
Icing sugar - 1 cup-sifted
Walnuts/Cashew/Badam - 2-3 tbsp,crushed


Method

For the Cake

Sift maida with cocoa powder,baking soda and baking powder-keep aside.
Mix sugar, curd and Malai, beat till fluffy. Add to it maida, cocoa powder, baking soda and baking powder. Add vanilla essence.
Beat well for 3-4 minutes till the mixture is smooth and light.
Transfer to a greased baking dish.
Microwave on 80% power for 8 minutes.
Let it cool.


For the Icing

Microwave 4 tbsp water in a bowl for 1 minute.
Add coffee,cocoa and butter to it and mix well.
Gradually add the sifted icing sugar,mix well.
Glaze the cake with the icing and garnish with crushed dry fruits.
Refrigerate till the icing is set.
